According to Hindu Mythology, Guru Purnima puja was performed based on a traditional story. That day there was Krishna-Dwaipayana Vyasa who was the author of Mahabharata. This day is also known as Vyasa Purnima. He had so much knowledge during his times and was known as Vedic hymns. He divided his Veda which his Rig, Yajur, Sama and Atharva. So he gave knowledge of these Vedas and then it is called Guru Purnima.
Another mythology according to yogic is that was the day of the birth of Adi Guru. This story is thousands of years back. On the Himalayas, there was a yogi. His origin was unknown. He was extraordinary so people gathered around him. Due to his powers, some people ran away from him. But seven men were there. They pleaded with him to give some experience to them for powers. At first, he refused them but when they didn’t want to go from there he gave them an elementary step. After the sadhana of 84 years, the yogi looked at them again. He was very much pleased to see that they were enriched with powers and used properly in that step. On the next day which was a full moon day yogi became the guru of those seven men. That Adiyogi became the Adiguru of those men. Those seven then became Saptrishi and spread the knowledge all over the world. So Guru Purnima is celebrated after that day.
